Well, inspired by all the baking that people have been doing, and the arrival of our new oven, I decided to try a few things. Those being a banana loaf, and acarrot cake. These are the first cakes I've ever baked. More on how they turned out later - my father being the bargain hunter he is, and conscious of the reduction in net worth as a result of the financial stuff going on, is taking my sister shopping for the various articles of office clothing that she's short of. Not something I want to miss.

Merry Christmas to all who will be celebrating.

Hey, good luck! Something I'll mention that I forgot whe nI posted about it is that I always replace oil in cake recipes with unsweetened applesauce (to reduce fat and increase moisture). You can do it either way, though, and it should be tasty. Let us know how it works out!

Ooh. That's a nice idea for me to try next time. Is it just straight volumetric replacement? And do you need to make any other adjustments?

Straight up replacement ,and I never make any other adjustments, although as I said, I think it is increasing the moisture somewhat (which is usually a bonus)
